Organic Chemistry - "Function" part 19, Water Solubility of Aspirin

Aspirin is only slightly soluble in water. An interesting thing happens when molecules at the surface of an aspirin crystal interact with water - H-Bonding with water causes a conformational change in the aspirin molecule, and the change weakens further H-Bonding between aspirin and water.  This is explained, in some detail, in the image, below.  Thank you for reading.
